Lightly fried baby squid with green chilli, lime & Maldon sea salt
   100g cleaned baby squid (including legs), cut into strips long ways
   Zest of half lime
   Maldon Sea salt flakes
   20g thinly sliced green chilli
   50g plain flour

Preheat fryer at 180 deg C.
Pass the squid through the flour and place in a sieve. Shake well to dust off excess flour.
   Fry quickly for 20 seconds or until the squid has turned a slight golden colour.
   In a bowl, sprinkle some chopped lime zest, sea salt and the green chilli and shake well.
   Serve with a small salad that has been dressed with some lime juice and olive oil. Serve immediately.
