| Lightly fried baby squid with green chilli, lime & Maldon sea salt 100g cleaned baby squid (including legs), cut into strips long ways ![]() Maldon Sea salt flakes 20g thinly sliced green chilli 50g plain flour Preheat fryer at 180 deg C. Pass the squid through the flour and place in a sieve. Shake well to dust off excess flour. Fry quickly for 20 seconds or until the squid has turned a slight golden colour. In a bowl, sprinkle some chopped lime zest, sea salt and the green chilli and shake well. Serve with a small salad that has been dressed with some lime juice and olive oil. Serve immediately.
