Embutido (Minced Pork Roll)
You can substitute beef for pork and omit bacon and chorizo.
   1 kilo pork mince
   1 chorizo, minced
   4 gherkins, chopped
   2 big onions, chopped
   2 carrots, chopped
   200g bacon, chopped
   100g raisins
   2 eggs
   Freshly ground black pepper to taste
   Salt to taste

Mix all ingredients in a deep bowl, using eggs as binding agent. Make sure mixture is even.
   Create five rolls, wrapping each in aluminium foil.
   Steam rolls for 4 to 5 minutes. When done, cool to room temperature before refrigerating. Take out only what you may require.
   Remove foil before frying in very hot oil using low heat.
Note:  The rolls may be kept in the freezer compartment for as long as one month.
